The fact that nobody in all of history since the Qu'ran has been able to rise to this challenge is pretty convincing in my opinion. Even non-Muslims if you watch documentaries on the Islam you will hear all these non-Muslim historians and academics saying "there is nothing like the Quran, start reading it and prepare to cry. The sheer majesty of the Arabic language, there is nothing like it". So even these non-Muslim historians and researchers are confirming what the Muslims say that the Qu'ran is unmatched.

The Quran is infamously boring and has the theological depth of a Sunday school crayon book. To uneducated arabs who've never seen a solid theological text it was a work of miracle, but to most of the world it's just a downgraded Bible.
In order to produce a surah similar to the Quran, you have to know the specific arabic dialect the Quran was revealed in, and very, very, very few people know it, therefore it's not a surprise that your challenge is unadressed when there are a billion other ways to disprove islam.
Although I don't recommend going around telling people to bring something better, because that's subjective, I think what the verse really tells us is that if there had been something better then people would overwhelmingly flock that instead which hasn't been the case.
