Islamic expansion definitely helped create a Christian European identity. People were aware some foreigners had brown skin back then but the vast majority of people only ever saw humans that looked like them. Unless they were in the Balkans or Iberia maybe. So I don't think they really placed much importance on race. To average European in the Middle Ages your religious affiliation or cultural identity was far more important.
