The Bible was literally made in imitation of the Iliad and Odyssey.

Homer was actually Moses. The Greeks stole the Exodus and rewrote it as the Iliad and Odyssey.

True, but Sumer isn’t even remotely close to being western.

Ancient Greece isn’t really any more western. They thought actual westerners like euros were barbarians.

The Romans and Greeks wrote a ton of shit down. To the point where Hellenistic and Latin neopagans can almost entirely recreate how ancient rituals were performed.

There are, but they're all Helleno-Roman, Egyptian, Semitic, or Mesopotamian.
Celto-Germanic and Steppe cultures were totally illiterate societies prior to about 200-400 AD in the case of Celto-Germanics, and about 800 AD in the case of slavs.

The answer is that they did, we simply aren't taught to think of said texts as "Religious" while simultaneously we are taught that things like the Old Testament are fundamentally different from the Mytho-Histories of Pagan faiths. The Illiad for instance is no different than the various parts of the Old Testament that are a Frankenstein of Real History and magical folk tales and legends.
The big difference between the Abrahamic and Pagan religious texts is that all three big Abrahamic faiths had a central Imperial authority that selected a group of texts and defined them as orthodoxy. Paganism never had any such central authority to proclaim and enforce that such and such book went in the "Holy Texts" and such and such other book remained "Just a story"
